Winemaking infrastructure
Manual harest in plastic bins loading 18 to 20 kg. Purness, sanitary
state and cleanliness of the berries are controlled in the farm itself.
The grapes are quickly carried to the winery, thrown into by hand with a
second quality control, and immediately crushed.
We possess two stemmer-crushers, French origin. White grapes (as well
as the portion of reds destined to rosé wine) are sent to a pneumatic
press Pera; the red grape is sent to fermentation vats made of concrete
with epoxy coating. Fermentation with selected yeasts and temperature
control, 10°C to 20°C for white musts and 25°C to 30°C for red.
Manual pumping over twice a day. Drawing off to pneumatic press Pera.
Removal of less after 3 or 4 weeks. An Italian rotaty vacuum filter
enables to recover most of the wine.
After the malolactic fermentation with selected organisms, wines rest
2 to 3 months. By the end of the winter and early spring there is a
pre-filtering through diatomaceous clay. Red wines are aged in oak;
whites and rosés stay in large containers for 6 months.
At the end of that period, the selected wines are blended in a large
container and stay together for some time in order to harmonize and
stabilize. We do not use clarifying substances or cooling in the
stabilization process of red wines; whites and rosés are stabilized
through and cold. The elaborated wines are controlled with a lenticular
filter Filtrox, Swiss origin, Last-generation bottling line GA1, Italian
origin. Different bottles are used according to the type of wine; 375
ml, 750 ml or 1,500 ml.
A well-equipped laboratory is available for carrying out all the
neccessary tests on raw material, products and input elements such as
bottles, corks, etc.
Use of wood
White and rosé wines have no contact with woor. Red wines stay in
medium-sized (2,000 to 6,000 litre) French oak barries that are 25 to
100 years old, for a period that varies according to the desired product
(2 to 10 years or 10 to 20 years). Besides, the winery bottles two young
reds aged in bottles.

500,000 bottles.
Vineyard increase
In recent years, 20 ha have been implanted with Pinot Noir,
Merlot.
